Food waste busting banana bread
Ingredients:
250g flour
2 ripe bananas (can be very ripe and you can also include the skins)
75ml oil
125g sugar
1tsp baking powder
3tbsp cinnamon
splash of plant-based milk
Optional: add a handful of chopped walnuts
Method:
Preheat oven to 180C.
Mash the bananas (or use a blender if including skins) before mixing in oil, milk and sugar.
Add the flour, baking powder and cinnamon, and mix well.
Add your batter to a lined loaf tin and top with chopped walnuts.
Bake in the oven for 40-50 minutes, or until a skewer comes out clean.
